If you are cautious about MSG (a flavor enhancer), you can try this recipe to make noodle masala at home and get rid of your worries.

Monosodium Glutamate or MSG is naturally present in various food items such as mushrooms, tomatoes, Parmesan cheese, and soy sauce. It has a unique taste that is different from salty, sweet, sour or bitter. The taste is described as ‘meaty’ or ‘savory’. Excess consumption of MSG promotes sluggishness in the body. It may also cause headaches, nausea, increased thirst and a twitching sensation in the mouth. In some cases, one may feel numbness, skin rashes and excessive sweating too. Artificial MSG is added by noodles manufacturers to enhance the taste of their tastemaker masala. Also, noodles contain lead beyond the permissible limit (the permissible limit of lead ranges between 0.01 ppm and 2.5 ppm).

- 6 grams coriander seeds - 3 tsp
- 2 grams fennel seeds - 1 tsp
- 2.5 grams cumin seeds - 1 tsp
- 0.75 grams fenugreek leaves - 1.5 tsp
- 1.4 grams black pepper seeds - ½ tsp
- 5 pcs green cardamom
- 5 pcs clove
- 2 pcs bay leaf
- 2 pcs cinnamon - sticks
- 5 pcs red chili - whole
- 1.75 grams fenugreek seeds - ½ tsp
- 1 pc mace
- 1 pc black cardamom
- 1.3 grams oregano - ½ tsp
- 2.25 grams onion powder - 1.5 tsp
- 2.25 grams tomato powder - 1.5 tsp
- 2.25 grams ginger powder - 1.5 tsp
- 2.25 grams garlic powder - 1.5 tsp
- 2 grams mango powder - 1 tsp
- 2 grams ground turmeric - 1 tsp
- 3 grams cornflour - 2 tsp
- 4.5 grams sugar - 1 tsp
- 5 grams salt - 1 tsp
Instructions
- Heat a pan on medium-low flame. Add 6 g coriander seeds, 2 g fennel seeds, 2.5 g cumin seeds, 0.75 g fenugreek leaves, 1.4 g black pepper seeds, 5 pcs green cardamom, 5 pc clove, 2 pcs bay leaves, 2 pcs cinnamon stick, 5 pc red chillies, 1.75 g fenugreek seeds, 1 pc mace, and 1 pc black cardamom. Mix and dry roast spices for 1 min on high heat.
- Add 1.3 g oregano and then mix well. Pour roasted spices into a grinder jar. Make a fine powder.
- Pour blender spices into a bowl.
- Add 2.25 g onion powder, 2.25 g tomato powder, 2.25 g ginger powder, 2.25 g garlic powder, 2 g mango powder, 2g turmeric powder, 3 g cornflour, 4.5 g sugar, and 5 g salt. Mix well.
