A Few Final Thoughts

These thoughts are also available in the recipe card so that you can print them:

  • Additions: Add a pinch of gluten-free asafoetida (heeng) to add the flavor.
  • Substitutions: Want this recipe more spicer? You can do so by replacing large chilies with regular chilies which are hotter. I have tried this recipe by replacing chilies with capsicum and it came out very well. A different version of this recipe can be made by replacing gram flour with groundnut powder.
  • Reductions: If you are using non-stick cookware, you can reduce the vegetable oil by half.
  • Shelf life: You can keep them in an airtight container for about one week.
  • Vegans: You can skip the yogurt part or use a vegan yogurt.
  • Don’t forget to roast gram flour beforehand to get rid of its raw flavor.
  • You can bring down the hot spice level of the chilies by deseeding them after splitting. To farther reduce the level, you can use the desiccated coconut powder.
  • Add yogurt on low flame, use thick yogurt for the best results.
