About Shahi Tukda Recipe: Shahi Tukda/Tukra is a rich and royal Mughlai dessert made with fragrant creamy sweet thickened milk (also called rabdi), and garnished with dry fruits. The word “Shahi” means “Royal” and “Tukda/Tukra” means “A Piece”. Therefore, “Shahi Tukda” means “Royal Piece”. This dessert is also known as “Double Ka Meetha”. This dessert is rich in taste, aroma, flavor, and obviously in calories.

Traditionally, the pieces of bread are deep-fried in the clarified butter and then coated with sugar syrup and creamy thickened milk. But, today I am making it in a simple and easy way. I have just pan-fried bread on a Tawa. You can serve Shahi Tukda warm or chilled.

  • You may use whole wheat bread instead of white bread.
  • You may also use condensed milk or make a vanilla custard instead of rabdi but nothing beats the original.
  • You may add 3 tbsp of milk powder when boiling milk, it will reduce the cooking time of rabdi. If you don’t add the milk powder, you have to simmer the milk for some more minutes.
  • You can also add saffron and cardamom powder, this will give even more flavor to rabdi.
  • You may use rose water in place of kewda water.

Ingredients

  • 1 liter milkfull fat
  • 4 slices breadwhite
  • 12 grams clarified butter (ghee)
  • 15 grams sugar
  • 30 grams nutsalmonds, cashew nuts, pistachios: sliced
  • 10 grams raisins
  • 25 grams khoya
  • 1 gram cinnamon powder
  • 3 pcs green cardamom
  • 1 tbsp kewda water

Instructions

  • In a broad thick bottomed pan or saucepan, pour in full-fat milk and bring to a boil on high heat. Shift it to another burner to thicken and lower the heat to medium-low. Keep stirring at regular intervals.
  • Take 4 slices of bread and remove the dark brown edges and then cut bread into smaller pieces.
  • Heat a Tawa on medium-low heat and add clarified butter. When clarified butter is hot, toast the bread pieces until golden brown and remove on a tissue lined plate.
  • When milk is reduced to 75% of its original volume, add sugar, and then mix well to dissolve sugar. Keep stirring the rabdi continuously.
  • Add nuts and pistachios. Add Khoya and cinnamon powder. Add Kewda water and mix the ingredients well. Now, let the rabdi simmer for 10 minutes.
  • Pour the rabdi on the bread slices and garnish with sliced almonds and pistachios.
